Stuffed Mushrooms

December 7, 2009

The holidays just aren’t the same without Mom’s stuffed mushrooms!!!  I have no idea where she got the recipe but she has been fixing them for as long as I can remember.  David loves them so I try to make them on Christmas Eve!

Stuffed Mushrooms

1 block cream cheese, softened
1 small pkg REAL bacon bits – I use Oscar Mayer (yellow bag)
2 sm. (or 1 lg.)  cartons of mushrooms, cleaned and capped

Mix cream cheese and bacon bits.  Stuff mushrooms.  Place on a baking sheet.  Bake at 350 until they start to brown on top, around 30 min.

Enjoy!

Meatballs

December 3, 2009

Who doesn’t love meatballs?!?!  They make a great finger food or serve them up with mashed potatoes for dinner.  I found this easy recipe in the newspaper.  Brands do not matter, I have tried them all!

Meatballs

1 bag of frozen, pre-cooked meatballs (approx 60, give or take a few)
1 jar of chili sauce
1 can cranberry sauce – jellied or whole berry

Put meatballs in crockpot and cover with chili sauce and cranberry sauce.  Cook on high for 4 hrs.

*If you want more sauce for mashed potatoes or rice, double the chili sauce & cranberry sauce.

It doesn’t get any easier than this!  Throw these in the crockpot before you leave for work (cook on low) and you will have a hot meal waiting for you when you get home!

Pilot Mountain Sausage Balls

December 2, 2009

Let’s kick-off the holiday season with one of my favorites (have you noticed I have a lot of favorites?),  Pilot Mountain Sausage Balls.  Growing up I just called them sausage balls but quickly realized when I moved to Pilot Mountain that they were mistaken for the other sausage balls, you know the ones with bisquick and cheese.  Anyway, this is what I grew up on.  Mom still makes them every Thanksgiving and I love to make them around the holidays.

Pilot Mountain Sausage Balls

1 lb. sausage
1 small pkg (8 oz) Pepperidge Farm Herb Stuffing Mix
1 lb. bacon

Mix sausage and stuffing mix.  You’ve got to get your hands in there and really mix it up!  Form balls and wrap with 1/2 slice of bacon.  Place in a baking pan, preferably with a rack.  Bake at 400 for approx. 45 min, turning over halfway through.  Make sure bacon is cooked.

Take these to your next party and I bet you don’t bring home any leftovers!  🙂
